To me, a dream guide is a dream character who is always "lucid" even when you are not. They are always aware of what is going on. They're very clever and can teach you certain things like how to teleport more easily. Unlike the dreamer, a dream guide can, say, teleport in the blink of an eye, whereas it's hard for the dreamer to teleport without spinning, using a door, or some other technique to anchor their focus and visualization. A dream guide tends to know a lot about you and will be able to give you useful information or advice about your life. And finally, a dream guide will be able to guide you through your dream world, knowing all the ins and outs of wherever you happen to be. If you ask to go somewhere else (perhaps from another dream) they should be able to take you easily.
Personally I believe that in different cases a dream guide can be different things. For example, they can be a helpful DC you only see once. Or they can be a DC who shows up frequently who is helpful. Or they can be a DC who you ask to be your companion or guide. So far what we know about dreams as far as scientific fact is that everything in your dream comes from within your own mind (excluding things like loud noises and other external stimuli which may make their way into your dreams).
But if someone chooses to interpret their dream or their dream guide as something more, and they are more happy doing that, more power to them IMO. Dreams can be incredibly spiritual experiences at times, even for those of us who are not necessarily believers in anything. So while I don't think that saying all dreams are "just" in the mind in any way devalues those wonderful experiences, I also think that there is nothing wrong with interpreting them as something "more" on some level.
