Well believe it, cause I've seen it happen a few times. There is even a term for it on sheep husbandry in wikipedia.
Riggwelter – a sheep that has fallen onto its back and is unable to get up (usually because of the weight of its fleece).
They just lie there wiggling their legs until they die of exhaustion.
